Ben Llewelyn's Blog

So it begins...

I have received the first assignements and the name of my Mentor for my time as a student of the MW. I shall not reveal his identity until we have spoken, but he works in the field of Champagne so we should get on famously.

So, for the first time since getting the letter (actaully the email!), I have had a chance to sit down and contemplate the enormity of it all. Strangely the work doesn't phase me but when I saw the list of other entrants I was put in a rather peculiar frame of mind. I know some of these people and they are very good, so who am I to contemplate competing with them? Self doubt is like rising damp and in order to nip it in the bud and add the equivalent of injecting silicone to my self confidence I looked back over my career in the trade and feel I am certainly prepared in areas that others may not be, especially when it comes to the politics of Italian wine producers!

So, a test essay question for you:
"After the harvest, what role does temperature play in wine production?"

Fermentation produces heat

Fermentation produces heat doesn't it? If so, then, if it's cooler (but not too cold), would the yeasties then do their fermentation job a lot quicker to keep themselves warm??? :-)
